Ingredients:
1 cup of Key Lime Juice
2 teaspoons of honey
2/3 cup of water
2 teaspoons of salt
1/2 teaspoon pepper
1 teaspoon thyme
2 tablespoons oil
1 tablespoon of ginger, peeled and chopped
3 pounds of chicken pieces
Blend all ingredients except the chicken in a food processor. This makes a wonderful marinade! Pour the marinade over the chicken and soak overnight in the refrigerator. Drain and save the marinade. Bake the chicken for about 1.5 hours at 325°F. Frequently baste with remaining marinate until the last 15 minutes.
