Ingredients:
3 tablespoons of butter or margarine
1 pound of fish fillets
2 tablespoons Key Lime juice
1/4 teaspoon salt
1/4 teaspoon chives
1/4 teaspoon dried tarragon
1/8 teaspoon pepper
3 Key Limes cut into four wedges each
1/2 teaspoon paprika
Preheat the oven to 350°F. Melt butter in a shallow baking pan. Place the fillets in a pan, then turn to coat both sides with butter. Drizzle Key Lime juice over fish. Combine salt, tarragon, chives, and paprika, then sprinkle over fish. Cover with foil and bake for 10-15 minutes or until fish flakes easily. Garnish with Key Lime wedges sprinkled with paprika. An old Florida delicacy!
Variations: skip the meringue topping and substitute a boarder of whipped cream after chilling. Also, grate the rind from two limes (about 1 teaspoon) and add to the pie filling.
